It is a member of the winter squash family and is native to North America.

Preparation and Use[]

To prepare butternut squash, cut it in half and remove the seeds. Then peel to remove the tough, outer skin.

Butternut squash can be roasted, stir-fried or added to casseroles. It also makes a great soup and when pureed it makes delicious baby food.

Health and Nutrition[]

Butternut Squash is an excellent source of beta carotene and vitamin E.

The body converts beta carotene into vitamin A which helps to strengthen your immune system and helps you see in the dark.
